Okay, I am on a mission for the Ultimate Breakfast Casserole! We do birthday celebrations at work and I attempted a breakfast casserole. Although everyone here at work thought it was TO DIE FOR, I thought I could totally do better.
SOOOO, with that said, if anyone has a REALLY GOOD breakfast casserole recipe they would like to share, please feel free to do so. We have another birthday celebration on Friday.
If we get enough recipes, I may try them all and I will let you know the favorite!

Anyways, my mom makes a breakfast casserole and I think its really good. Its pretty traditional, so I don't know if thats what you are looking for or not.
Sunshine Casserole
8 Day Old Biscuits, halved
8 Eggs, lightly beaten
16 ounces of meat (sausage, bacon, or ham)
1 Cup Sour Cream
1 Medium Onion, Chopped
1 Green Pepper, Chopped
1 Red Pepper, Chopped
1 Zucchini, Chopped
2 Cups shredded Cheddar Cheese
Preheat oven to 350.
Cook the meat, drain any grease, and set aside.
In a large mixing bowl, mix eggs, sour cream, onions, peppers, and zucchini.
In a large baking pan, place the biscuits all across the bottom of the pan. Then layer the meat on top of the biscuits. Then layer the cheese on top of the meat. Then pour the egg mixture on top and its ready to go in the oven!
My mom bakes it for 30 minutes, but our oven is kinda old, so I am not sure if that time is real accurate. I would just watch for it to turn golden brown.

K... now, I know that I'm kinda in the minority here.. but I HATE breakfast casseroles with a passion! So I recommend like a "sweet" type casserole.. maybe cinnamon rolls with something on them? I don't know, I'm not cheffy-like :) Good luck!

Simple version:
6 slices of bread buttered on both sides
6 eggs whipped
2 cups shredded cheddar
1 pkg. sausage
2 cups half & half
Brown Sausage & drain. Place buttered bread in bottom of a casserole dish. Add sausage and cheese. Mix together eggs & half & half, pour over casserole. Sprinkle with salt & pepper. Cover and place in refrigerator over night. Bake at 350, uncovered for 45 minutes or until eggs are set & cheese is brown.
(You can also use ham instead of sausage)
